Whitehouse Cheesecake

Wednesday, December 16th, 2009

Years ago, when ice cream came in a few basic flavors, the corner drugstores sold Whitehouse Vanilla. This special treat was simple vanilla ice cream speckled with beautiful, deep purple-red cherries. It was a favorite finale to my grandmother’s holiday banquets. Add cherry- flavored extract to your HMR Vanilla supplement pudding. Make an extra serving … your friends and family will want to share the cherry cheer! (more…)

Creamy White Bean Spread

Thursday, December 10th, 2009

Try this creamy, high-fiber, low-fat veggie dip instead of high-fat prepared hummus on your Hanukkah table. My annual strategy is to cut fat and calories in all holiday side dishes to reserve calories for a single, scrumptious latke! (more…)

Tangerine Berry Trifle

Thursday, December 10th, 2009

A trifle is built from layers of cake, sugar, fruit and cream. Trifles vary with fruit availability, and thus become showcases for seasonal favorites. This ultra-simple trifle features tangerines and raspberries for winter, but can easily be changed by substituting plums, peaches, apricots and strawberries during warmer months. Treat your friends and families to a “rich” dessert that is “rich” in vitamins, minerals and dietary fiber. Keep your food environment nearly cake and cookie-free! This holiday trifle is gorgeous, healthy and easy to prepare. Enjoy!

Health and Prosperity Caviar

Monday, December 7th, 2009

Southern tradition requires black-eye peas on New Year’s Day as the harbinger of prosperity and good fortune in the 364 days to come. Why not include the start of your successful resolution for a healthy year of multi-colored (red, green, purple) vegetable dishes, seasoned with health-friendly herbs (circumin) that provide high fiber and excellent environmental control? This dish stands alone as an appetizer or serves as a “topping” for fresh spinach salad or steamed, chopped collard greens, chard or kale. Try some variations using other small cooked beans for any occasion other than New Year’s Day. A healthy table is so easy … any day of the year. Enjoy! (more…)
