This is a whole meal dish is a protein-rich bowl of rainbow colored plants and roots. They are seasoned with warm, toasty spices that include the antioxidant protections of curcumin and capsaicin. Your healthy table can always be simple and special at the same time. Think color. Think spices. Please feel free to add your own favorite ingredients! Kale and chard with trade out well for spinach. Peas can be mixed into the eggs as well. Use your left-over vegetables (cauliflower works really well) and just season them with a bit of warmed curry and skip the baked veggie process. (more…)
