This high fiber lemony bean stuffing adds protein and a small amount of fat from a healthy unsaturated source. The lemon hummus is also a perfect sandwich spread or vegetable dip. Try variations of this recipe with other beans and herbs such as black-eye peas (field peas) with flat-leaf parsley; white kidney beans (cannellini) with basil and oregano; and green peas with mint and tarragon. Vary the spice blend with substitutes such as curry blends, sweet and mild chili powder or Indian masala. Keep your table healthy by including legumes and vitamin C-rich fresh citrus every day. In a hurry? Purchase a lower fat hummus at your grocery store and add pureed beans and lemon juice to extend the volume and decrease the fat content! You can also freeze some for later use. (more…)
