Pineapple Brine for Grilled Chicken or Fish Print

It’s grilling season! Infuse tons of flavor with a tropical twist to your chicken or fish with this simple yet flavorful marinade. Fire up the grill and raise your spatulas…it’s going to be a great father’s day!

½ cup pineapple juice
1 tablespoon lime juice
1 tablespoon vinegar, cider or wine (not balsamic)
½ teaspoon dried oregano
¼ teaspoon salt
1 teaspoon olive oil
½ teaspoon garlic, minced

Combine ingredients. Pour into plastic bag. Insert chicken or fish, close bag and refrigerate. Marinate skinless chicken in brine for 8-12 hours or fish fillet for 30 minutes to one hour, depending on thickness. Drain the marinade well before grilling.
