Squash-Blossom Multigrain Breakfast

The HMR Multigrain Cereal is rich in oats, a grain recognized by the Food and Drug Administration for lowering cholesterol, including the “bad” LDL type, thus reducing the risk of heart disease! We improved the rainbow nutrition benefits by adding anti-oxidant rich, fiber-rich winter squash. Canned pumpkin squash puree is the easiest squash ingredient to use. You can also try frozen pureed winter squash or fresh squash, peeled, cooked and pureed. This recipe makes a triple batch of flavored squash for the cereal recipe. It keeps well when refrigerated. Now you always have a quick healthy breakfast, dessert or brown bag lunch “stand in” ready for your healthy table!

Ingredients
1 package HMR Multigrain Cereal
1 15-ounce can pureed pumpkin
1 teaspoon fresh orange
¾ tsp pumpkin pie spice
1 teaspoon vanilla extract
¾ cup water
Sugar substitute (optional)
Fruit for topping (optional)

Preparation
Combine pumpkin, citrus zest, spices, vanilla extract and sugar substitute (optional.) Scoop ½ cup of mixture into a bowl. Stir in water and HMR Multigrain dry cereal. Cover and microwave on high for 2 minutes. Stir and let stand for another minute. Top with fresh, defrosted or dried fruits if desired. Just remember to limit dried fruit to a quarter of the volume as compared to fresh.
