Oat-Crust Cranberry Apple Pie

You, your family and friends deserve sweet treats made from fresh fruits and hearty whole grain. Keep your kitchen free of environmental calorie traps like cookies, cakes and buttery pastries. This apple and cranberry dessert is so nutritionally rich that you can enjoy it for your holiday breakfast or dessert. You can substitute canned, jarred or frozen peaches, pears or berries. Your healthy table is the perfect gift to share on any holiday!

Ingredients
3 6-ounce bags or 5 apples (about 4 ½ cups) Unpeeled apple slices or chunks
1 cup fresh cranberries
Fresh lemon juice (1 lemon, squeezed)
1 4-ounce packet sugar-free, fat-free vanilla pudding mix
2 tablespoons Splenda Brown Sugar sweetener
1 cup Toasted oats (not instant or steel-cut)
2 tablespoons Reduced calorie margarine
1 teaspoon, divided, Ground cinnamon
Non-stick cooking spray

Preparation
Preheat oven to 375 degrees. Mix the cut apples, cranberries, lemon juice, ½ teaspoon cinnamon and dry pudding mix in a bowl. Pour the mixture into a glass dish or pie pan sprayed with non-stick cooking spray. “Cut” the margarine into the Splenda brown sugar, oats and ½ teaspoon cinnamon using a food processor or forks until the mixture looks like coarse meal. Scatter the dry mixture over the fruit. Lightly coat the top with cooking spray. Bake 35 minutes or until toasted and bubbly. Serve warm, if possible!
