Succotash Stuffing

Stuffing is the most calorie dense dish on the holiday table. When else would we polish off a loaf of buttered bread with a few (very few) veggies at one sitting? This year allow your HMR Mushroom Risotto Entrée to be the starch and “glue” of a healthier stuffing and just add oodles of veggies! All that is left to provide on your healthy table is a bit of lean turkey with cranberry, a baked yam and your favorite green bean salad. Share the thanks and spare the calories!

Ingredients
1 HMR Mushroom Risotto Entrée
2 cups Frozen succotash, or mix corn and lima beans
½ cup Fresh celery, chopped
½ cup Bell pepper, chopped (optional)
½ cup Mild onion or leeks, chopped
1 teaspoon Poultry seasoning
2 to 4 tablespoons (as needed) Turkey or chicken broth or HMR chicken soup

Preparation
Combine corn, lima beans, celery, onion, bell pepper, parsley, poultry seasoning and a small amount of broth or soup in a bowl. Cover and microwave for 1 to 2 minutes, or until tender crisp. Gently toss vegetables and HMR Mushroom Risotto Entrée. Cover and microwave for 1 minute. Gently stir again before serving.

Variations: Add dried cranberries and/or cubed smoked low-fat poultry sausage.
