HMR Entree Recipe: Eggplant Jambalaya

Enjoy one of Louisiana’s favorite signature dishes using the HMR Chicken Creole Entree and eggplant. Eggplant is rich in fiber and high in potassium, phosphorous, calcium and vitamins A, B, and C. Although similar to Spanish dishes, Jambalaya also has roots in African cooking where a vegetable sauté is known as jambe, and rice is known as ya.

Ingredients
1 HMR Chicken Creole Entrée
1 cup fresh eggplant, peeled and cut in ½ inch cubes
½ cup chopped bell pepper, fresh or frozen
¼ cup chopped celery
½ cup diced tomatoes, canned or fresh
Dash of Creole / Cajun seasoning mix
Chopped green onion or chives for garnish

Preparation

  1. Spray a shallow dish with non-stick cooking spray.
  2. Add eggplant, bell pepper, celery and tomatoes. Microwave on high until eggplant is tender-crisp.
  3. Gently stir in entrée and seasoning. Heat through. Top with chopped green onion. Enjoy!
