Crisp, fresh apples are coming into our markets, just in time for Rosh Hashanah gatherings. Rosh Hashanah meals often include apples and honey as a symbol of wishes for a “sweet new year”. This honey-sweetened apple dish is a simple, healthy dessert or side dish. Sliced apples are easier to serve and eat than the traditional whole baked apple. The preparation is easy. I use an apple “corer-slicer” (looks like a metal starburst that you pull down over the fruit as it stands upright) to ease preparation. You can easily substitute prepared apple slices, as available in the produce departments, but the texture will not be as firm.
Many Jewish holiday apple recipes add dates and dried apricots to baked apples. This honey glaze includes jarred apricot fruit spread for the same tangy flavor without the chopping. If you choose fruit-only spreads (without added sugars) you enjoy fewer calories, as well. Garnish with nutrient-rich pomegranate seeds as they are symbolic of the desire to have many merits, as represented by the many seeds of the beautiful fruit. Your healthy Rosh Hashanah table is ready for your healthy, happy new year.
Ingredients
4-6 (to equal about 4 cups) fresh apples, sliced
1 tablespoon lemon or orange juice
2 tablespoons roasted almond slices and/or pomegranate seeds (optional)
Apricot glaze:
1 tablespoon Apricot fruit spread
2 teaspoons honey
1/8 teaspoon each cinnamon and nutmeg
Preparation
Preheat oven to 425 degrees. Squeeze citrus juice over apples to prevent browning. Toss well. Combine apricot glaze ingredients. Pour over apples and toss gently. Scatter apple slices in a shallow baking pan and bake for 15 minutes. Cool or serve warm. Top with roasted almonds and/or pomegranate seeds just before serving.
