Bloody Mary Tomato SaladEarly tomatoes are already shining like jewels in our local farmers’ market and in our patio gardens. This simple fresh tomato salad tastes like a chewable Bloody Mary cocktail! You can add your own fresh, very lightly steamed green beans, cauliflower, carrots, bell pepper, broccolini, squash …whatever the garden offers. Bring your favorite combination to your healthy table and treat your body to a selection of vitamin C, beta-carotene, folate (essential for blood formation and DNA synthesis), iron, potassium and both soluble and insoluble fibers.

Ingredients
4 cups Fresh tomatoes, cut
2 cups Crisp celery, sliced
¼ cup Green, red or white onion, finely chopped
¼ cup Fresh, parsley, chopped (optional)
Fresh lime or lemon wedge, optional garnish

Marinade*:
¼ cup Apple vinegar
2 tablespoons Ketchup
Tabasco bottled hot sauce to taste
¼ to ½ teaspoon Horseradish, prepared
½ teaspoon Worcestershire sauce
Freshly ground pepper to taste

Preparation

  1. Combine marinade ingredients. Toss vegetables in the marinade. Refrigerate for 1 hour or up to 3 days. Serve with a lime or lemon wedge. A quick squeeze makes the flavors fresher.

*In a Hurry? Add hot sauce, worcestershire and horseradish to ½ cup of your favorite low-calorie vinaigrette.
