Indian Spiced Spinach Chicken Pre-cleaned, pre-cut and convenience packaged ingredients transform this HMR Entrée into a restaurant quality meal with little effort. You’ll enjoy the earthy, toasty flavor of Northern Indian cuisine while your body enjoys anti-oxidant rich leafy spinach and fiber and protein-rich garbanzo beans. The flavoring blend contains immune-boosting circumin and digestive supporting, detoxifying ginger. Purchase these spices a few teaspoons at a time from “bulk” containers at farmers’ markets or health food stores, such as Henry’s Markets. Rotate the spices often to retain nutritional integrity, deep flavors and bright colors.

Serve this entrée with a simple salad of thinly sliced cucumber, red onion and cubed watermelon, sprinkled with a splash of lime juice. Red, orange-yellow, green, blue-purple … sound familiar? It’s so easy to create your healthy table with rainbow nutrition.

Ingredients
1 HMR Savory Chicken Entrée
¼ cup Chopped red or yellow onion
½ cup Canned or sautéed sliced mushrooms
½ cup Garbanzo beans, rinsed
½ cup Recipe-cut canned tomatoes
1 cup Fresh spinach leaves
½ teaspoon each ground turmeric, cumin, ginger
½ teaspoon Fenugreek seeds (optional)
Dash of cayenne pepper or red pepper flakes

Preparation

  1. Combine onion, mushrooms, garbanzo beans and spices. Heat all in a sauté pan or microwave for 1 minute.
  2. Chop the chicken fillets and combine the entree ingredients with the spiced bean-vegetable mixture, tomatoes and spinach leaves.
  3. Reheat in the sauté pan or microwave 30 seconds to 1 minute until warmed but not over-cooked.
