Ingredients
1 HMR Savory Chicken Entrée
¼ cup Chopped red or yellow onion
½ cup Canned or sautéed sliced mushrooms
½ cup Garbanzo beans, rinsed
½ cup Recipe-cut canned tomatoes
1 cup Fresh spinach leaves
½ teaspoon each ground turmeric, cumin, ginger
½ teaspoon Fenugreek seeds (optional)
Dash of cayenne pepper or red pepper flakes
Preparation
- Combine onion, mushrooms, garbanzo beans and spices. Heat all in a sauté pan or microwave for 1 minute.
- Chop the chicken fillets and combine the entree ingredients with the spiced bean-vegetable mixture, tomatoes and spinach leaves.
- Reheat in the sauté pan or microwave 30 seconds to 1 minute until warmed but not over-cooked.
