There is a glut of gorgeous strawberries in our farmers’ markets now. Select glossy, firm and fragrant berries to add wonderful dietary fiber, vitamins and minerals to your HMR meal replacements. Add an exotic blend of spices and the result is so flavorful that you won’t miss the cheese or cake in our “cheesecake.” Enjoy fresh berries … the beautiful choice for healthy sweet treats.
Ingredients
4 cups fresh strawberries
1 packet HMR 70 Plus Vanilla Shake Mix
2 packets Splenda sugar substitute (optional)
¼ teaspoon Vanilla extract (optional)
1 packet HMR Multigrain Hot Cereal
½ cup plus 1 teaspoon water
Chai Spice Blend*:
1 teaspoon ground ginger
1 teaspoon ground cardamom
¼ teaspoon ground cinnamon
¼ teaspoon ground allspice
1/8 teaspoon salt
Dash ground pepper
* Purchase spices in small quantities from bulk spice suppliers such as Boney’s, Henry’s or Windmill farms.
Preparation
- Wash and trim berries, slicing strawberries, if needed. Sprinkle the berries with 1 packet of sugar substitute, if desired. Set aside. Combine chai spices and set aside. Toss dry HMR Whole Gain Cereal with 1 teaspoon of water and ¼ teaspoon chai spice. Spread cereal on foil-lined pan or sheet, sprayed generously with non-stick coating. Toast in a toaster oven or broiler for 1 ½ to 2 minutes, stirring a couple of times, to create a toasty color and crunchy texture. Cool. Distribute cereal in bottom of 4 small dishes to form a “crust”.
- Blend HMR 70 Plus Vanilla Shake mix, 4 cubes of ice, ½ cup water, vanilla extract, 1 packet Splenda and ¼ teaspoon chai spice. Spoon creamy mixture over the toasted cereal “crust”. Top with strawberries and serve at once.
