Shitake and Asparagus Risotto

A delicious combination of vegetables to complement and enhance the flavor of the HMR Mushroom Risotto Entree!

Ingredients

1 pound medium asparagus, trimmed and peeled
Nonstick cooking spray
1 sweet onion, peeled and finely diced
¾ pound fresh shitake mushrooms, sliced ¼ inch thick
2 cups vegetable or chicken broth
Fresh cracked black pepper to taste
2 tablespoons tamari (or low-sodium soy sauce)
1 to 2 tablespoons mirin (optional)
½ teaspoon hot sauce
4 HMR Mushroom Risotto Entrees
¼ cup nonfat sour cream (optional)

Instructions

  1. Clean and trim asparagus. Peel stem end if necessary and cut into ½ inch thick slices on a bias, leaving asparagus tips about ½ inch to 1 inch long.
  2. Blanch asparagus by bringing a 4 quart pot of water to a boil. Add asparagus, uncovered, and cook about 3 to 4 minutes until tender but slightly crisp. Drain quickly and transfer to a bowl of ice water to refresh and stop the cooking process. Reserve until needed.
  3. Meanwhile, heat a large sauté pan (fitted with a lid) over medium heat. When hot, spray generously with nonstick cooking spray and add onions and mushrooms. “Sweat” the onions and mushrooms covered, adding small amounts of broth to keep it from sticking and stirring occasionally until onions begin to turn translucent, about 6 to 8 minutes.
  4. Uncover and allow to sauté for 4 to 5 more minutes, stirring occasionally. Continue to add broth to keep it from sticking and to form a stew-like consistency.
  5. Add pepper, tamari, mirin and hot sauce and continue cooking, slowly adding the remaining chicken broth. Simmer over low heat about 10 minutes then add asparagus and HMR Entrees. Stir to blend. Allow to heat thoroughly, about 5 minutes.
  6. Just before serving, stir in nonfat sour cream to give the risotto a rich and very creamy texture.
  7. Place a portion of Shitake Asparagus Risotto on a large plate and garnish with Arugula and Grapefruit Salad.
