Saint Patty’s Potatoes (3/15/10)

Add a wee bit of blue to your Irish potatoes this Saint Patty’s Day. Dress your potato and favorite green vegetable with a simple, healthy blue cheese dressing. If you buy the cheese pre-crumbled in a container you can stretch the powerful flavor and calories over months and months. Spoon out the tablespoon or two that you need and freeze the rest. Continue to ration the cheese by spooning out frozen crumbles and returning to the freezer.

Use Greek-style yogurt as the base for the vegetable dressing for a creamier texture. Try a variety of vegetables including broccoli or broccoli slaw, cabbage or cabbage slaw, asparagus, baby artichokes, Swiss chard, and kale. Make your own good luck for good health with your healthy table!

Ingredients
2 cups green vegetables
10 ounces Irish potato or potato of choice

Dressing:
½ cup Fresh parsley
¼ cup Non fat milk
½ cup Non fat yogurt, Greek style
¼ cup Fresh lemon juice with a bit of zest
2 tablespoons Balsamic vinegar, white, if possible
Salt and pepper to taste
2 ounces crumbled blue cheese

Preparation

  1. Combine dressing ingredients.
  2. Roast potato, in the microwave for 6 to 8 minutes or in the oven for one hour at 425 degrees. Adjust baking directions for smaller potatoes as needed.
  3. Steam or microwave the green vegetable.
  4. Arrange the vegetable over the potato and top with ¼ cup dressing. The dressing recipe will yield 1 cup.
