Ingredients

Nonstick cooking spray
3 red onions, peeled and sliced ¼ inch thin
½ head red cabbage, cored and sliced into ½ inch ribbons
2 Granny Smith apples, peeled, cored and cut into ½ inch slices
2 teaspoons powdered ginger
¾ cup vegetable or chicken broth
2 tablespoons brown sugar (or equivalent Splenda brown sugar)
2 tablespoons balsamic vinegar

Instructions

- Heat large nonstick sauté pan until hot, then spray with nonstick cooking spray.
- Add onions, cabbage, apples and ginger. Cook over medium heat about 5 to 10 minutes, stirring constantly. Moisten with broth as needed to avoid sticking. Continue cooking until onions are transparent and cabbage and apples are tender but still slightly crunchy.
- Add brown sugar and balsamic vinegar. Allow sugar to dissolve thoroughly and continue to simmer until liquid has thickened slightly.
- Remove from heat and keep warm until needed. You may also allow to cool thoroughly and store in a sealed container in the refrigerator.
Tip: After cooling, caramelized onion mixture can be refrigerated and will keep for up to a week. Caramelized onions can be used to enhance other recipes where you need onions and are great served at room temperature in salads.
