Prep Time: 30 minutes

—————————————————————————-
Ingredients
—————————————————————————-
Nonstick cooking spray
3 red onions, peeled and sliced ¼ inch thin
½ head red cabbage, cored and sliced into ½ inch ribbons
2 Granny Smith apples, peeled, cored and cut into ½ inch slices
2 teaspoons powdered ginger
¾ cup vegetable or chicken broth
2 tablespoons brown sugar (or equivalent Splenda brown sugar)
2 tablespoons balsamic vinegar

—————————————————————————-
Instructions
—————————————————————————-

  1. Heat large nonstick sauté pan until hot, then spray with nonstick cooking spray.
  2. Add onions, cabbage, apples and ginger. Cook over medium heat about 5 to 10 minutes, stirring constantly. Moisten with broth as needed to avoid sticking. Continue cooking until onions are transparent and cabbage and apples are tender but still slightly crunchy.
  3. Add brown sugar and balsamic vinegar. Allow sugar to dissolve thoroughly and continue to simmer until liquid has thickened slightly.
  4. Remove from heat and keep warm until needed. You may also allow to cool thoroughly and store in a sealed container in the refrigerator.

Tip: After cooling, caramelized onion mixture can be refrigerated and will keep for up to a week. Caramelized onions can be used to enhance other recipes where you need onions and are great served at room temperature in salads.
