“Two tomato” preparations, cooked in sauce and sun-dried, give this entree a rich tomato flavor. Canned vegetables, frozen beans and a favorite HMR Entrée create a savory, full-volume Italian dish without the temptations of an Italian restaurant setting.
Ingredients
1 HMR Cheese & Basil Ravioli Entrée
1 cup Frozen green beans; cut
½ cup Canned red or white kidney beans, drained
1 cup fresh or ½ cup canned Crimini (Italian) mushrooms, sliced
2 tablespoons (about 3 halves) Sun-dried tomatoes*, oil or water packed, sliced
2 tablespoons Chopped Italian, flat-leafed parsley
1 teaspoon Red wine vinegar
Freshly ground black pepper to taste
*If you use oil packed tomatoes, drain and blot thoroughly.
Preparation
- Carefully toss all ingredients except entree. Microwave on high, covered, for 1 minute or until warmed. Spoon the HMR Cheese and Basil entree onto a platter. Layer the vegetable mixture over all. Re-heat until ravioli is warmed.
