Combine the HMR Vegetable Beef Stew entree with roasted root vegetables.
Ingredients
1 pound baby red potatoes, washed and quartered
3 large parsnips, peeled and cut into ½” half moons
3 large rutabagas, peeled and cut into ½” cubes
5 carrots, peeled, cut into ½” pieces
5 large stalks celery, cut into ½” pieces
1 large sweet onion, peeled and cut into six wedges
non-stick olive oil spray
Garlic Powder to taste (or Rockerbox Gourmet Garlic Dust)
fresh cracked black pepper to taste
herbs de provence to taste
4 HMR Vegetable Stew with Beef entrees
2 14 oz cans chicken or vegetable broth
1 tablespoon Worcestershire sauce
1 cup frozen peas
Instructions
- Preheat oven to 400F.
- Prepare the potatoes, parsnips, rutabagas, carrots, celery and onion by cleaning and cutting as directed. The key to roasting the vegetables is to cut them each uniformly so they cook evenly.
- Spray non-stick olive oil on flat baking sheets. Use separate sheet for potatoes and celery, carrots and onions, parsnip and rutabagas. Place vegetables on flat baking sheet spray vegetables with non-stick olive oil, then sprinkle with garlic, pepper and herbs de provence to taste. Place vegetables into the oven to roast for 20 to 25 minutes, or until they are tender and begin to caramelize. Check after 20 minutes.
- When vegetables are almost finished, heat HMR Vegetable Stew with Beef entrees in a large stew pot with 1 can of the chicken or vegetable broth over medium low flame. When roasted vegetables are finished, transfer them to the stew pot and add Worcestershire, pepper and frozen peas. Stir to mix well, using additional broth as needed. Allow stew to simmer for 15 to 20 minutes. (Best when made a day ahead and reheated.)
Note: Use any other root vegetables you may like, such as turnips, yams, sweet potatoes, or other vegetables including mushrooms, cabbage, etc. Be creative!
