Use these spicy golden nuggets on any simple salad tossed with your favorite low-fat vinaigrette and a bit of fat-free feta cheese. Your salad will become an instant favorite, satisfying side/main dish for family or guests.
Ingredients
1 15-ounce can Garbanzo beans (chickpeas), rinsed
2 teaspoons Olive oil, Spanish, if possible.
1 teaspoon Ground cumin
1 teaspoon Dried, crushed thyme
1 teaspoon Paprika, smoked Spanish, if possible
¼ teaspoon Ground cinnamon
½ teaspoon Salt
Preparation
- Preheat oven to 450 degrees. Blot rinsed beans and toss with olive oil, spices and salt. Spread on a baking sheet lined with foil and sprayed with non-stick coating.
- Bake for 30 to 35 minutes or until crunchy and toasted. Cool and serve on salads, soups or just as a brown bag snack.
