Peppered Pasta with Artichokes (2/9/10)

Your easiest entrée preparation ever! Just pull a few staples from your pantry and enjoy an elegant, peppery remix of the HMR Chicken Pasta Parmesan Entrée. Of course, you can add spinach, zucchini, peas, broccoli, canned white kidney beans… whatever you have on hand. If you grow a pot of herbs, a few sprigs always bring the flavors of processed vegetables to life. If salt intake is a problem for you simply rinse the pepper slices and artichokes under cool water; choose lower sodium canned tomatoes. Healthy dining with pantry staples is too easy to resist!

Ingredients
1 HMR Chicken Pasta Parmesan Entrée
¼ cup Peperoncini, drained and sliced
½ cup Artichoke hearts, packed in water, drained and quartered
½ to ¾ cup Canned Italian flavored tomato, recipe cut
2 tablespoons Fresh basil, parsley or both, chopped

Preparation

  1. Gently combine cut tomato, peperoncini and artichokes with HMR Chicken Pasta Parmesan Entrée. Microwave (covered) for 1 to 2 minutes on high. Toss with fresh herbs. Serve immediately.
