Ingredients
1 HMR Five-Bean Casserole Entrée
1 cup canned diced tomatoes with juices, Mexican flavored
½ cup canned dark red kidney beans, rinsed
¼ cup mild enchilada (red chili) sauce
¼ cup fresh cilantro, chopped (or equivalent frozen cubes)
½ cup vegetarian meat substitute “crumbles”
1 tablespoon sliced green onions for garnish
Preparation
- Place all ingredients, except garnish, in a bowl. Stir, cover and microwave on high for 2 to 3 minutes, until heated through. Garnish and serve.
