Superfast SuperBowl Chili

Are you still on target with your New Year commitment to streamline dinner choices to HMR entrees and vegetables? Don’t let the SuperBowl celebrations sabotage your program! This healthy vegetarian chili can be “fresh-made” in seconds with canned vegetables, a can-opener and a microwave. Your high-fiber, high-protein HMR Five-Bean Casserole Entrée is the building block for this dish. Let HMR do the basic chopping and cooking. Meat lovers can add vegetarian meat substitute “crumbles” for chewy, meaty texture. Even SuperBowl healthy dining in the New Year couldn’t be easier! Enjoy!

Ingredients
1 HMR Five-Bean Casserole Entrée
1 cup canned diced tomatoes with juices, Mexican flavored
½ cup canned dark red kidney beans, rinsed
¼ cup mild enchilada (red chili) sauce
¼ cup fresh cilantro, chopped (or equivalent frozen cubes)
½ cup vegetarian meat substitute “crumbles”
1 tablespoon sliced green onions for garnish

Preparation

  1. Place all ingredients, except garnish, in a bowl. Stir, cover and microwave on high for 2 to 3 minutes, until heated through. Garnish and serve.
