IHM’s Baha Super-Bowl (2/1/10)

Superbowl Sunday is just days away. How can you run interference for your best calorie D-fence? Kick off with this super easy, super filling game plan… an HMR Entrée and super nutritious vegetables! It’s your healthy table. Go team IHM!

Ingredients
1 HMR Chicken with Barbecue Sauce Entrée

¼ cup divided roasted tomato salsa
2 tablespoons non-fat sour cream
½ cup canned pinto beans, drained and rinsed
3 cups pre-packaged coleslaw cabbage and vegetables
½ cup fresh or canned tomatoes, chopped
2 tablespoons onions, chopped
2 tablespoons fresh cilantro, chopped

Preparation

  1. Separate chicken from entrée. Chop chicken into cubes and set aside.
  2. Toss the entrée beans and rice with pinto beans and 2 tablespoons salsa. Cover and warm in microwave for ½ to 1 minute or until just heated through. Do the same with chicken cubes.
  3. Place beans and rice mixture in the bottom of a bowl. Mix the coleslaw vegetables with sour cream and remaining 2 tablespoons salsa.
  4. Layer the cabbage mixture over rice and beans. Top with chicken, chopped tomato, onions and salsa. Squeeze fresh lime over all and pass the extra salsa!
