This is the easiest version of healthy tortilla soup in todo mundo! HMR Beef and Bean Enchilada entrée is the base. The tortillas are in the soup instead of on the surface. I have suggested a few veggie additions to the soup base, but try your own favorites or simply use your leftover vegetables.
Ingredients
1 HMR Bean and Beef Enchilada Entree
1 cup chicken or vegetable broth, low sodium
½ cup chopped tomato, fresh or canned
½ cup cut corn, fresh or canned
½ cup canned pinto or black beans, drained
½ cup chopped zucchini, fresh or frozen
2 tablespoons chopped cilantro
2 tablespoons chopped green onions
Lime wedge for garnish (optional)
Preparation
- Puree entrée and broth in a blender or food processor.
- Combine tomato, beans, corn and zucchini in a bowl. Cover and microwave for 1 minute.
- Pour entrée and broth mixture over all, stir, cover and microwave for 1 minute or until warmed through.
- Scatter onions and cilantro over top and serve.
- Optional: Serve with a lime wedge and a spoon of non-fat sour cream. Delicioso!
