Caldo Yucatan

Enjoy Southern Mexican cuisine at home without the risk of chips and salsa tableside! This simple and filling “caldo” (soup-meal) is an easy way to enjoy three servings of vegetables and 17 grams of dietary fiber from your HMR Entrée and the convenience-packaged products in your pantry or freezer. Just remember to choose salt-free seasonings and low-sodium broth to control sodium. Healthy dining with HMR Entrees in the New Year continues to be easier than ever! Enjoy!

Ingredients
1 HMR Chicken Creole Entrée
1 cup No salt added chicken broth
¾ cup (½ 15-ounce can) No salt added canned tomatoes with juice
¾ cup (½ 15-ounce can) Canned Garbanzo beans, drained
1 teaspoon Chopped jalapeno pepper*
½ teaspoon Dried oregano
¼ cup (or 3 frozen cubes) Chopped cilantro, fresh
2 tablespoons Chopped onion
2 tablespoons Chopped or sliced radish
2 tablespoons Chopped or sliced avocado (optional)

* Substitute ¼ teaspoon roasted jalapeno (chipotle) powder

Preparation
Place broth, tomatoes, garbanzo beans, chipotle pepper and oregano in a microwavable dish. Cover and microwave for 2 minutes. Add entrée and heat for 1 minute, or until heated through.
Stir in cilantro and top with onion, radish and avocado. Serve.
