Shepherds’ Pie is a traditional cool weather meal of stew topped with mashed potatoes. Ingredients
1 HMR Vegetable Stew with Beef Entrée
Root vegetable “mash”:
2 cups potatoes, yams, turnips, carrots, parsnips, rutabaga, peeled and cubed
¼ cup buttermilk*
2 teaspoons reduced calorie margarine
Salt, pepper to taste
1 tablespoon fresh rosemary, chives or parsley, chopped (optional)
* Note: Buttermilk helps to thicken the vegetable mash but low-fat milk will work as well.
Preparation
Place all root vegetable cubes in bowl with ¼ cup of water. Cover and microwave until tender, about 4 minutes. Drain and add buttermilk, margarine, and seasonings. Mash with a whisk or pulse mixture in a food processor until smooth. Stir in herbs. Loosely cover HMR Vegetable Stew with Beef Entrée and microwave for 1 minute. Spoon the hot entrée onto a plate. Top with mashed root vegetables. Enjoy!
