Ingredients
2 (about one pound) fresh sweet potatoes, peeled and chopped
1 tablespoon Reduced calorie margarine, melted
2 tablespoons Non-fat milk
1 teaspoon ground cinnamon
¼ teaspoon each ground nutmeg and salt
1 tablespoon Splenda brown sugar substitute
1 cup oatmeal, regular or quick (not instant)
½ cup all-purpose flour
2 tablespoons reduced calorie margarine
2 tablespoons Splenda brown sugar substitute
2 tablespoons Non-fat milk
Preparation
- Preheat oven to 375 degrees. Toss potatoes with 1 tablespoon melted butter, milk, cinnamon, nutmeg and salt.
- Pour into a baking dish sprayed with non-stick coating. Cover and bake for 20 minutes.
- Blend oats, flour, and sugar in a bowl. “Cut” in margarine and milk until it resembles coarse crumbs.
- Scatter the topping mixture over the sweet potatoes and bake uncovered for 20 minutes longer, until the potatoes are soft and crumbs are lightly browned on top.
