Moroccan Beef Stew (10/19/09)

This is cozy “cool weather” meal has warm (tasting) spices. The superb variety of vitamins and minerals (including anti-oxidant-rich vitamins A and C, and potassium) are provided by rainbow nutrition. Substitute root vegetables (turnips, parsnips, sweet potatoes) for earthy sweetness and tang that taste like autumn. Trader Joe’s Fresh Harvest Medley is a combination of yams, squash and turnips.

Ingredients
1 HMR Beef Pot Roast Entrée
¼ cup canned garbanzo beans, rinsed
1 cup winter squash, (butternut, acorn), peeled and cubed
1 cup fresh spinach
1 teaspoon Garam Masala (middle-Eastern spice blend)
½ teaspoon mild curry powder
½ teaspoon ground cumin
2 tablespoons fresh mint and/or cilantro, chopped

* Note: Garam Masala spice blend is available at Henry’s, Whole Foods and most farmers’ markets.

Preparation

  1. Place squash cubes in bowl with ¼ cup of water.
  2. Cover and microwave until tender, about 3 or 4 minutes. Drain.
  3. Mix all remaining ingredients in a bowl.
  4. Cover and microwave for 1½ to 2 minutes, until warmed through.
