Mediterranean Garden Pasta

Your summer garden favorites … tomatoes, spinach, red peppers, fresh beans, zucchini, and citrus… enhance a popular HMR Entrée with extra fiber, protein, minerals and antioxidants in perfect rainbow nutrition! Most of the colorful vegetables are available in convenience-packaged products from the grocery store. Fresh and healthy dining with summer vegetables is too easy to resist!

Ingredients
1 HMR Chicken Pasta Parmesan Entrée
1 cup Fresh green or wax beans, chopped
1 cup Red, yellow or green bell pepper, chopped
1 cup Summer squash (zucchini, yellow), chopped
1 cup Baby spinach leaves
½ cup Onion (red, green or yellow), chopped
1 fresh tomato, seeded and chopped
2 tablespoons sliced pitted olives (green or black)

For Mediterranean Dressing:
2 tablespoons low-fat Greek or Italian-style dressing
Juice and zest of lime or small lemon
1 tablespoon Chopped cilantro or basil

Preparation

  1. Combine dressing ingredients and set aside.
  2. Place green beans, bell pepper, squash and onion in a dish. Microwave (covered) for 2 minutes on high.
  3. Cool slightly and gently toss vegetables with HMR Chicken Pasta Parmesan Entrée, spinach leaves, tomato, olives and dressing. Serve immediately.
