Think of a cool, crisp, colorful Mediterranean summer salad. Now imagine that you can sip it from a spoon or drink it from a frosty cup! Just make a trip to the local farmers’ market (or your own backyard garden) and break out the blender! There is no need for laborious, careful cutting and chopping.
Gazpacho is a classic Spanish summer soup that depends on seasonal tomatoes –yellow, heirloom, beefsteak or whatever looks best- for its refreshing texture and flavor. Oh, by the way… notice the colors of the ingredients? Enjoy a rainbow in a bowl on your healthy table.
Ingredients
2 large or 4 small fresh tomatoes
½ small onion red onion
1 large or 3 small fresh cucumber
1 large bell pepper, red, orange-yellow or green
2 or 3 large stalks celery
2 tablespoons wine vinegar, white or red
2 tablespoons parsley or herb of choice
½ cube (or 1 teaspoon crushed garlic) Trader Joe’s frozen garlic cubes
1 teaspoon paprika, Spanish or Hungarian (smoky flavor)
Salt and freshly ground pepper to taste
Preparation
Wash, trim and coarsely chop all vegetables. Combine vegetables, wine vinegar, herb, garlic and salt and ground pepper in a blender. Cover and pulse on medium until vegetables are finely chopped, but not yet smooth. Chill if not served immediately.
