Watermelon

Posted on May 7th, 2009

High in potassium, vitamin C, and lycopene, these refreshing, low-calorie jewels are favored for antioxidant properties. Look for the heaviest melons with firm skins and sunspots, light areas that are gold in color. Remember that the seeds give the melon sweetness; therefore the seedless varieties will not be as sugary.

Nutrition Facts:

  • Good source of Vitamin A
  • High in Vitamin C
  • High amounts of the antioxidant Lycopene
  • 50 calories per cup

Selection and Storage:

  • Look for a firm and symmetrical melon with a healthy sheen and a buttery yellow underside (from where it has touched the ground) that is heavy for the size. Avoid watermelon with pale green or white color undersides and those that contain cracks, bruises or soft spots.
  • Uncut watermelon can be stored for up to 2 weeks at room temperature. Cut pieces should be refrigerated.

Tips:

Add thin watermelon slices to your favorite salads, puree and freeze to enjoy on a hot summer day. Also, check out the watermelon salsa recipe.
