Enjoy this refreshing watermelon salsa served over fish, from grilled salmon steaks to white fish fillets, grilled for tacos. You can also create a quick main dish salad by spooning the salsa over thinly sliced cucumber and tomato and topping with cooked shrimp.
Ingredients
2 cups peeled, seeded and diced watermelon
1 Granny Smith apple, diced
1 Mango, peeled and diced
1 Jalapeno, seeded and minced
¼ cup Red Onion, chopped
1 cup Cilantro leaves
Dressing:
1 TBS Rice vinegar
2 TBS lime juice
1 TBS sugar
Salt and pepper to taste
Preparation
- Combine dressing ingredients. Toss with fruits, pepper, onion and cilantro. Enjoy!
