Gremolata, a blend of lemon zest, parsley and garlic, is perfection as a flavoring for summer’s new-crop green beans. Visit your farmers’ market for crisp, slender, deep-green beans. Use them as a center piece on greens and add tuna for a refreshing salad. So easy! So refreshing for summer! Enjoy.
Ingredients
16 oz. of fresh Green beans
4 tsp Olive oil
1 clove of Garlic, minced
2 TBS fresh lemon juice
1 tsp fresh lemon zest
¼ cup fresh parsley, chopped
6 oz. of Tuna, cooked and flaked, or canned
2 TBS roasted pine-nuts
2 cups fresh greens
Salt and pepper to taste
Preparation
- Wash and trim green beans. Steam beans 5 minutes or less to retain the bright color and crispness. Drain well.
- Combine olive oil, lemon juice and zest, parsley, garlic, salt and pepper with beans.
- Gently fold in tuna. Arrange over a platter of greens.
