While it’s common to add more vegetables to a salad, we often forget that fruit makes a tasty addition as well. This salad mixes spinach, strawberries and kiwi with a light dressing that gives it a citrus punch.
The combination of spinach, strawberries and kiwi gives you a healthy dose of vitamin C, fiber and potassium and is a rich source of vitamin K, B-complex vitamins and omega-3 fatty acids, among the many important nutrients in this recipe. Including potassium in your diet can help control heart rate and blood pressure and omega 3’s reduce inflammation and may help lower risk of chronic diseases. All this and it’s delicious too!

Ingredients
1 bag of baby spinach (6 ounces, rinsed and dried)
1/8 cup sliced red onion
4-5 fresh strawberries, sliced
1 kiwi, sliced
3 tablespoons fresh orange juice
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
1 tablespoon extra virgin olive oil
Freshly ground pepper and salt, to taste
Preparation
- To prepare dressing, in a small bowl whisk together orange juice, vinegar, mustard, olive oil and salt & pepper to taste.
- Combine spinach, onion, strawberries and kiwi in a medium bowl. Lightly coat with dressing and toss.
