Ingredients
1 HMR Mexican-Style Enchilada Entree
1 cup Shredded cabbage
1/2 cup Shredded carrot
2 tablespoons Chopped cilantro
1/4 cup Canned black beans, drained
1/4 cup Trader Joe’s Corn and Chile Salsa
1 tablespoon Non fat sour cream
(optional) Lime wedge, green onion, tomato garnishes
Preparation
1. Combine cabbage, carrot and cilantro.
2. Mix beans and corn salsa and set aside.
3. Microwave enchilada for 1 minute as label directs.
4. Top with cabbage mixture and microwave for 10 seconds more.
5. Top with salsa, a squeeze of lime, and a spoon of sour cream. Delicioso!
